I Have De Powa


Who doesn’t love a good soup, especially when it make you think of Arnold Schwarzenegger?

I love soup. It warms you in all the right places and can make you feel very happy. You eat it when you’re sick, you eat it when it’s cold out, and you can put literally anything in it. That’s the kind of freedom everyone needs in their life. So when the weatherman finally said it might be getting cold out, I immediately went out and got everything to make this amazing power protein soup. Now this is a modified recipe from Estee Lalonde, and if you want to watch the video she made about this soup, you can find it here.

Power Protein Soup

2 medium potatoes

3 bell peppers

3 cloves of garlic

10 small carrots

1 can black beans

1 can northern beans

1 can black eyed beans

2 cans chopped tomatoes

1 1/2 cup vegetable stock

salt and pepper, to taste

paprika, to taste

siracha (or other hot sauce), to taste

First, start off with peeling and chopping up your respective vegetables. Also, start preheating your oven to 300 degrees Fahrenheit. When it comes to your veggies, you can chop them up however you like, although I do recommend peeling your potatoes, and slicing your garlic. Once they’re all chopped up, toss them in a baking dish with olive oil, salt, pepper, and paprika. Then toss them in the oven to roast for about 30 minutes.

While your veggies are roasting, toss your tomatoes, beans, vegetable stock, and siracha in a large pot over low heat. Stir it all together and let it simmer until your veggies are done. Once your vegetables are done roasting, drop them into your soup mixture and stir together. Let it simmer for another 10-15 minutes to let all of your flavors combine. Serve and enjoy! I like mine with a bit of white cheddar cheese on top, or it would be pretty good with crushed tortilla chips in it as well.
