CCW; Peppermint Meltaway Cookies

You can’t have Christmas without peppermint!

Hey friends! I’m sorry I didn’t post yesterday, Christmas has been crazy! Well, not really Christmas, but working all the time somewhere that never closes. But anyway, I’ve got these yummy peppermint meltaway cookies! The base is butter and while I’ve never made this specific type of cookie, these reminded me of my obsession with candy canes as a kid and how I would steal them from my grandma’s Christmas tree while we were staying at her house. First from the back, then working my way to the front so that by Christmas morning they were all gone.

Peppermint Meltaway Cookies

1 cup butter, softened

1/2 cup powdered sugar

1/2 tsp peppermint extract

1 1/4 cup flour

1/2 cup cornstarch

2 tbsp butter, softened

1-2 tbsp milk

1/4 tsp peppermint extract

1 1/2 cup powdered sugar

1/2 cup crushed peppermints

To start the cookies, beat together your butter, sugar, and extract in a large bowl and set aside. In another bowl, mix together flour and cornstarch. Gradually mix together and stick in the fridge for an hour. Once your hour is up, make 1 inch balls and bake for 10-12 minutes at 350 degrees Fahrenheit.

For frosting, best your butter until fluffy and add your sugar, milk, and extract until smooth. Top with crushed peppermints.
