You know that meal, your favorite meal? You could eat it everyday for a year, on special occasions, on cheat days, breakfast lunch and dinner? Okay, maybe it’s just me, but I could literally eat pasta for every meal and I would never tire of it. So I’m home, sick, and grocery-less due to getting back from vacation. Too tired to go to the store, too poor to get take away from somewhere. I scrounge my kitchen and come up with half a jar of pesto, and some linguine. I want to get back in bed so I think of the quickest way to cook this pasta, and I come across a little tip to cook my spaghetti in a skillet with water will cook it faster than a pot of water. Alas, I am back in bed within ten minutes, with a big plate of pasta. YUM
Skillet Pesto Pasta
4 tbsp pesto
2 tbsp butter
1/2 cup linguine, broken into halves
grated parmesan cheese, to taste
It’s a pretty simply recipe. Take a medium skillet and fill it 2/3rds the way up and salt. Bring to a boil and cook your noodles per your box. Then toss everything together over low heat. Now, I am a mostly cheese kind of person so I added a LOT of cheese and that’s probably why my noodles never look the color of the sauce, just the color of the cheese. Oh well, to each his own.
