Mixed Berry Sandwich Cookies

When you want to impress that in-law, grandmother, or new boss, these cookies will do the trick. 

Before we get started, I wanted to apologize for being gone the last few weeks, but I started a business! As in, I literally just started a business and basically only have a name and EIN. It’s called Pacific Baking Co. and it is a wholesale bakery. I offer a decent sized menu, which options for personalization and creating your own menu for your event! I’ll let you guys know more when I know more! Now, back to your regularly scheduled programming. 

Okay, so I know what you’re thinking. ‘Hannah, these cookies look a touch familiar and I don’t like being deceived and you know how much I don’t like being deceived’. And you would be correct. The cookie bit of these sandwich cookies are actually made from jammie dodger cookie dough, which you can check out here. But other than that, there is no other deceiving done in this recipe, I promise. Besides being deceivingly easy! Ha, GOTCHA! But really, these are super easy.

Jammie Dodger cookie dough, or any sugar cookie dough

4 oz mixed berry cream cheese

6-10 strawberries

1 cup powdered sugar

After making your dough according to the recipe, pipe (or spread, live your life) your cream cheese, stack your strawberries, and dust LIGHTLY (I put lightly in caps because my dumbass thought I would be cool and try to use my sifter, while over the cookie then immediately doused three different cookies in powdered sugar) (not pictured) and assemble. These are super yummy with tea, with coffee, as dessert, you name it!
