Nutty For Banana Bread

Okay, yes, I know I’ve already got a banana bread recipe on this site. Buuuut this bad boy is entirely plant based and is honestly so much better!

When I found out you could make an egg like consistency with chia seeds and water, I knew I had to test it out on banana bread! And honestly, banana bread has got to be my favorite dessert that I personally make. Typically I don’t eat a lot of my own desserts, but will eat anything sweet with a vegan label on it made by literally anyone but myself. Weird, right?

But, onwards and upwards!

Vegan Banana Bread

3 bananas, mashed

1/2 cup sugar

2 tbsp chia seeds

2/3 cup water

2 cup flour

1 tsp salt

1 tsp baking soda

1/2 hazelnuts, rough chopped

Start off with mixing the chia seeds and water, then let sit for 15 minutes. Beat together the bananas, sugar, salt, and baking soda. Add in the chia seed mixture and stir until fully mixed in. Mix in flour in 1/2 cup increments. Fold in your hazelnuts and bake for 55 minutes at 350 degrees Fahrenheit.

  1. I didn’t get back to you on the banana nut bread you left me for the crew to try. It was very good. Dense but moist, ot had a great texture to it. Had some crunch that was welcomed. Nice job. I would take a loaf anytime.
