Okay friends, let’s be honest with each other here. If you had to guess how many cookies you eat in a month, how many would it be? I mean, if we’re being super honest, I’d have to say more than ten for myself. It’s just so easy! Free cookie samples at the grocery store? Done. Friend’s birthday? Done. Sitting at a bar and there’s no other food besides prepackaged cookies AND they’re vegan? SIGN ME UP.
But I still hadn’t found the best vegan cookie. Everything I had at Whole Foods was great, but they had such a ‘wholesale been sitting in this case for the last ten hours and a least three other people have manhandled it’ taste. You know that taste? Please say yes, I’m trying to make a point to M.
Well stand aside Whole Foods and every other grocery store cookie because I am here to kick your ass AND take your name!
Better Than Whole Foods Chocolate Chip Cookie
1 c Earth Balance (or your choice of vegan butter, I just found this one works best)
1/2 c brown sugar
1/2 cup organic granulated sugar
1/4 c milk (I’ve used almond and coconut and they both work so whatever you have on hand will work)
1 tsp vanilla extract
2 1/4 c all purpose flour
1/2 tsp salt
1 tsp baking soda
1 c vegan chocolate chips (also really yummy with cacao nibs!)
First off, start with ROOM TEMPERATURE butter! I don’t mean to yell but unless you’re looking for a great arm workout you’re not going to have a good time.
But once you’re at room temperature beat together your butter and sugars until you get to a nice paste.
Then mix in the milk and vanilla. In another bowl whisk together the flour, baking soda, and salt.
Then add dry to wet in thirds and you’re done!
Fold in your chocolate chips or cacao nibs and bake those bad boys for 8-10 minutes at 350 degrees Fahrenheit.
Add 1/4 c peanut butter for a good time
These cookies don’t spread much so I suggest rolling the dough into a ball in your hand then flattening slightly like a baby pancake
