‘Pulled Pork’ BBQ Sandwiches


I’ll be the first to admit that I am never terribly keen for anything barbecue flavored. It just seems to have a too intense flavor that was somehow too harsh and too sweet at the same time. But for some reason, I was just really craving barbecue sandwiches. We had tried BBQ flavored jackfruit that was premade and I was SO not into it, so that was not going to be an option.

So after scouring Pinterest for inspiration on what I could use in lew of jackfruit, I came across a recipe that had used red onion, slathered in barbecue sauce, and baked in the oven. I realized that I only had one red onion but a boatload of carrots so I figured I’d try that out.

Carrot & Red Onion ‘Pulled Pork’ BBQ Sandwiches

1 red onion, sliced thin

2 carrots, sliced thin

2 cloves of garlic, minced

1 c BBQ sauce

I feel kind of stupid for posting this as an actual recipe, it’s so simple. Literally just mix everything together and bake for 30 minutes at 350 degrees Fahrenheit.
