Vegan Carrot Cake

For some reason I am just carrot crazy this week! Which is funny considering carrots aren’t technically in season at the moment. But of well!

Onwards!

Vegan Carrot Cake

2 1/4 c flour

3 tsp baking powder

1 tsp baking soda

3 tsp cinnamon

1/2 tsp nutmeg

1 tsp salt

1/2 c applesauce

1 c non dairy milk

2 tsp vanilla

1/2 c granulated white sugar

1/2 c light brown sugar

1/2 c vegetable oil

2 carrots, grated

Start off by mixing together your sugars, oil, vanilla, applesauce, and milk. Fold in dry ingredients and grated carrots, and bake for 40 minutes at 350 degrees Fahrenheit.
