The Best & Easiest Cheese Sauce

Okay, I know what you’re thinking. It’s a very bold statement and when I say it all I can think of is that meme of the guy saying “how could you say something so bold yet so controversial” but it’s true!

This cheese sauce is inspired by Hot For Food, where they make a cheese sauce by boiling carrots and potatoes then blend them together. I thought to myself, that’s super great but what if I cooked them in a skillet with extra spices? That would be good right? And I was right! Scroll down and enjoy!

The Best & Easiest Cheese Sauce

3 carrots

4 potatoes

1/4 c nutritional yeast

1 c non dairy milk

2 tsp yellow mustard

2 tsp salt

2 tsp pepper

2 tbsp garlic powder

2 tbsp onion powder

1 tsp paprika

Start off with rough chopping your carrots and potatoes. I recommend pieces on the smaller side, so they take up less time to cook.

Cook them down with some oil until the potatoes and carrots are soft. Toss them in a high speed blender with everything else until smooth.

You can also use this sauce for mac and cheese, queso for dipping, and nachos!

For this particular day, we decided to make Irish Style Nachos with Sliced potatoes baked in the oven until crispy.

For that we sliced the potatoes thinly, and baked in the oven for about 30 minutes at 450 degrees Fahrenheit. Topped with our incredible cheese sauce, some guac, jalapenos for M, and dinner is served!
