Cauliflower Alfredo Sauce

Who knew cauliflower would make such a creamy alfredo sauce?!

I surely did not. And if we’re being honest with each other here, I used to hate cauliflower. Like, actually. Thought it was bland, had a weird texture, ‘what are you supposed to even do with it?!’.

Well my friends, I am a changed woman.

Cauliflower Alfredo Sauce

1 head cauliflower

1 c non dairy milk (I used almond but I’ve also used coconut and it’s just as good!)

2 tbsp nutritional yeast

1 tbsp garlic powder

1 tbsp onion powder

2 tsp dried thyme

2 tsp dried rosemary

1 tsp black pepper

1 tsp salt

It’s a fairly straight forward recipe. Boil the cauliflower for about 15-20 minutes then blend everything together and serve with noodles. If you don’t have a blender I imagine if you boiled the cauliflower for longer then used a potato masher that would work as well.
