If you know me personally, you know I LOVE mac and cheese! Before transitioning to vegan, everywhere we went I would get mac and cheese. I just couldn’t help it. Obviously now I don’t eat just any mac and cheese and while Daiya isn’t my very favorite (I prefer homemade cheese sauce which will be coming soon!) it definitely hits the spot.
So I figured I’d gusey it up and make it a proper meal.
Fajita Inspired Mac n Cheeze Burrito
1 onion, sliced thin
1 bell pepper, sliced thin
1 tsp chili powder
Daiya boxed mac and cheese
Simply make the mac and cheese as per the box, then cook down the veggies with some oil and the chili powder. Serve in bowls or wraps and enjoy!
