Greenbean Casserole

Okay so I know it’s not even close to Thanksgiving but since I love the holiday season so much I’ve been thinking ahead.

And I was thinking about my favorite side, the classic greenbean casserole.

So I made one. Completely from scratch.

Greenbean Casserole

5 cremini mushrooms

1 onion

3 cloves garlic

2 tbsp dried oregano

3 tbsp worchestershire sauce

1 c non dairy milk

1 tbsp nutritional yeast

3 c raw green beans

3/4 c crispy onion topping

Start off my chopping your veggies. Mince the onion and garlic and rough chop the mushrooms.

Cook down the onion and garlic with some oil and once they’re halfway to carmalizing, add in the mushrooms, oregano, and worchestershire. Once fully cooked, blend with the milk, and nutritional yeast.

Stir the mushroom mixture with the green beans, put in a lines dish, top with crispy onions and bake for 35 minutes at 350 degrees Fahrenheit.

  1. This looks awesome! Green Bean Casserole is my favorite Thanksgiving side. My mom doesn’t make it anymore because it’s not “healthy”, but maybe I can convince her to make something like this 🙂
