Nothing like a yummy biscuit to get you up in the morning! I personally LOVE the idea of biscuits and gravy for breakfast but considering I work a full time job where I work early mornings, I don’t think it’s in the cards for me. But thankfully, breakfast for dinner is a thing! While I’m still perfecting my vegan gravy, I though y’all might enjoy this easy biscuit recipe!
Simple ‘Buttermilk’ Biscuits
3 c all purpose flour, plus extra for kneading
3 tsp baking powder
1 tsp salt
1 tbsp brown sugar
1 tbsp apple cider vinegar
1 1/4 c coconut milk
Start with mixing the coconut milk and apple cider vinegar together. Set aside for about 5-10 minutes. You’ll see it start to curdle and that’s when you know it’s ready.
While waiting for it to curdle, whisk together the dry ingredients. Then add wet to dry and mix. It’ll make a very wet dough. Turn out onto a clean surface and knead for 2-5 minutes.
Pat flat (don’t roll!) and to about 1-1 1/2 inch thickness. Cut out by hand or with a round cooking cutter.
Bake for about 15 minutes at 350 degree Fahrenheit.
