Double Chocolate Muffins

Now, I’m not interested in being the type of food blogger that you have to get through a full life story to get to the recipe. You’re looking for something specific and I have it, so here you go.

Double Chocolate Muffins

1 1/2 c flour

2 tsp baking powder

1/4 c + 2 tbsp cocoa powder

1 c non dairy milk

1 tbsp apple cider vinegar

1/4 c coconut oil

1/4 c maple syrup

1/3 c applesauce

1/2 c chocolate chips

Start by combining the non dairy milk and apple cider vinegar, then set aside for a few minutes to curdle. Then whisk all of the dry ingredients in a large bowl. Stir in everything minus the chocolate chips, then fold those in.

Bake in a lined cupcake tin for 23 minutes at 375 degrees Fahrenheit.
